To be clear, Turbogrill could have been designed with an even higher temperature right from the start, this would not have caused any technical problems.
But after many tests and countless samples, everyone involved, including many professionals, came to the conclusion that 850 degrees Celsius is absolutely perfect.
Higher temperatures can produce more smoke, consume more gas, and stress the material—and are absolutely unnecessary for flavor perfection.
Temperatures below 800°C, however, reduce the so-called Maillard effect and thus prevent the steak from being cooked to perfection. This means the meat is cooked from the inside out—and that's exactly what you don't want.
