R Sono caldere usate abitualmente nei caseifici, Se fa' solo formaggio non puo' attaccare a 70°, se invece facesse passate di pomodoro consigliamo la stagnatura a parte. La cottura che fa poi dipende da Lei, puo' usare gas o legna, avendo la perizia di saperle usare entrambe. Vengono impiegate allo scopo lastre adatte a fare le caldere con spessore da 2 mm., quindi non banale rame da paioli, ma da caldere.
