Faithfully tied to tradition, we strive to preserve the ancient values of mills (
or molini, from the Latin molinum deriving from mola ) by building them in the most natural way possible: from real solid beech combined with natural granite as the heart of the mill. Furthermore, as far as technically feasible, we do not use plastic or metal where there is direct contact with the flour.
We've also replaced the tried-and-tested metal wire technology with a simple manual knob for those who prefer to do it themselves.
According to our philosophy, we do not use plastic wires but a friction lift for a system of raising and lowering the lower stone.
It's fascinating to see how simple it is to fine-tune the grinding adjustment.
Furthermore, to clean the grinder, a quick release movement with your hand is enough, without having to use any tools to open it.
